Nachos (or Taco Pie)

I was going to make this into a taco pie, but ended up being lazy about making the pastry (see a theme going?), so just turned it into nachos.

500g mince or ground turkey
1 onion, chopped
2 cans spicy chili beans
2 cans diced tomatoes w/chillis
1 small can tomato paste
cumin
red or cayenne pepper to taste
jalapenos
chillis
nacho chips
cheese
sour cream
avocado

Brown the onion and mince. Mix in the beans, diced tomatoes, tomato paste, spices, and chillis and cook for 30 minutes or so. Spoon onto nachos then top with cheese, avocados, jalapenos and sour cream.

Oh, I found a place in Sydney that stocks mexican goodies, and I now have many cans of tomatillas in the pantry.

It's Monterey Mexican Foods and they do have minimum order amounts. Have you found a good place in Adelaide for buying real mexican ingredients?

Not yet, although there is a Mexican take away (possibly South American owners) in one of the food courts in the city...the best I've found so far, although only pseudo-mex. Anywho, I notice she sells products such as mole sauce etc and was going to ask where she gets them.

Post the link for that site if you can...I'd be interested. If you have any good Mexican recipes you'd like to share also....

They are wholesalers, so their product list doesn't even have prices. Just drop them an email and they'll send you the price list --they are nice folk. I emailed the order in, they calculated it all plus postage and sent it off with an invoice. A bank transfer is the easiest way to go with them.

You're right, the "mexican" restaurants down here AREN'T. I went to one of them and they used LEMON juice in the margaritas (which tasted like watered down slush).

I'll post my mexican shredded pork recipe on my site soon, and I guess I'd better put my guacamole recipe up there cus they don't know how to make that here either :) Although everyone has their own fav guac recipe!

Oh, where downtown in the mex takeaway you mentioned?

Lemon juice? And I bet they charged $10 for it?

Not sure how to tell you where the place is; wouldn't make a special visit, but if you work in the city and eat out for lunch or just happen to be around there, it's worth a stop.

What I wanted to know was this; do you put it in a "raw" pastry, then into the oven at what temp?, and bake for how long? Or, do you cook pastry first , put ingredients in and call it finished?

cook the pastry, then put all the ingredients in, put corn chips on top, along with cheese, and put back in oven to melt. then top the corn chips with avocado and jalapenos, and maybe put some sour cream on the side.

Check out Chile Mojos in Norwood when you return to Adelaide. It has the best selection of Mexican ingredients around, and you can usually get corn tortillas in Wooly's or Cole's.

As for the pie, if you are in the States and feeling lazy, try grabbing a box of Jiffy Cornbread mix (just add water and one egg). It costs 40 cents, the batter is ready in two minutes, and if you put it on top of your filling in a pie tin, it makes a tamale-flavored pie, which is equally as good.
