Coconut Rice Pudding

As if the Chicken in Heart Attack Sauce wasn't enough, I had a craving for rice pudding, which I haven't had in ages. It was my favourite dessert as a child.

1 1/2 c rice, cooked
1 c coconut milk
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 c sugar

Place rice, coconut milk, milk, sugar, cinnamon and nutmeg in a medium saucepan and cook over low heat for 10-15 minutes or until mixture thickens.

*Optional toppings: shredded coconut and cream

Your sticky rice with mango and this coconut rice pudding sound absolutely marvelous. I love rice pudding, never thought to make it with coconut milk. Good job.

This was excellent! I also did some homework on the nutrition facts and according to my calculations per serving this recipe is only 156 Calories,4.5 grams of fat, 4 grams of sat fat, 9 grams sugar, and 6 mg of sodium. I also tried it substituting 1/4 cup of the coconut milk with almond milk to make it a little less rich and cut down on the fat and calories and it tasted wonderful too.
